Real bagels, made in Marshfield. Cold-fermented for 36 hours, boiled quick, and baked blisteringly hot.

The process

Two days for every bagel

No shortcuts. Every batch follows the same four steps, and most of the work is waiting.

  1. Step 1 · Day oneMix

    Flour, malt syrup, salt, sugar, yeast and water. That's it.

    A stiff dough, mixed in two stages and shaped by hand.

  2. Step 2 · Overnight, twice36 hr

    Cold ferment

    A long, slow rest in the fridge builds flavor and that dense, chewy crumb, and it's what gives the crust its little blisters.

  3. Step 3 · Day three45 sec

    A malted boil

    Sets a thin, crackly crust with a little shine.

  4. Step 4 · Bake day500°F

    A blistering bake

    We bake these the right way. 5 minutes on a soaked bagel board, then flipped onto the oven floor to finish for another 10. Baked fresh the morning you get ’em.
